Barbecue Rub for Chicken & Ribs

One of our favorite Sunday dinners, especially during the Daytona 500 or on the 4th of July, is baby back ribs. And yes, we've perfected cooking them in a toaster oven. Of course a regular oven or traditional outdoor barbecue will work as well, but for those of us that live in a condo or small apartment, today's high tech toaster ovens work just fine! Here's the process....

  1. Thaw a rack of baby back ribs and remove membrane on back side of ribs.
  2. Apply some mustard generously to both sides of the ribs. This acts as a binder for the spice rub to follow.
  3. Add Backyard BBQ Rub to both sides of the ribs.
  4. Place rack of ribs in a shallow baking pan with about 1/2 inch of water.
  5. Back at 250 - 275 degrees F, covered loosely with tin foil for 3 hours. (bast after 1-1/2 hours, add additionally water to pan if necessary, and return to oven).
  6. Next, remove ribs from oven, top ribs with pads of butter, wrap ribs tightly with aluminum foil, and return to oven for 30-45 more minutes at 250 degrees F, meat side down on baking pan with minimal water this time.
  7. Lastly, remove from oven and coat both sides of ribs generously with Rick's Maple Bacon or Original BBQ Sauce (or your favorite sauce) and place back in oven at 250 degrees F for 15-20 minutes or until sauce begins to caramelize.
  8. ENJOY!

We haven't tried cooking a roasted chicken in the toaster oven yet, but it's on our list!
