Banana-maple Quinoa Flax Bread

"I saw this recipe on TikTok for Quinoa Bread and I found it intriguing. So I bought some quinoa and thought I'd give it a shot. Why not, right? I'm into alternative foods, as long as they are super healthy. Well, the results astounded me. At first I was skeptical. I soaked the quinoa over night, blended the ingredients, poured it into an 8" loaf pan, and was like... 'This can't be right.' But, here we go! I baked it, plopped it out onto a cooling rack, let it cool for a bit, and then cut into it. WOW! Though it didn't rise as much as a traditional bread, it was very airy. I slathered on some organic peanut butter (don't use that brand name stuff, it's horrible for you), and oh yeah!! Delicious. And I'm thinking, if I used pure maple cream instead of peanut butter, that would be great too! Either way it's good. If you have sugar issues, peanut butter adds additional protein to the recipe, making it a lower glycemic index food.
Quinoa Bread: Here's my recipe...
- 2 C. tri-color quinoa (uncooked, soaked over night to remove bitterness)
- 2 eggs (or flax eggs for vegan)
- 1/2 tsp sea salt (enhances flavor)
- 3/4 C. all purpose flour
- 1 tbsp Vermont maple syrup
- 1 tbsp flax seed (Optional: adds Omega-3s)
- 1 tsp baking powder
- 1/2 semi-ripe medium banana (optional)
Instructions...
- Soak quinoa overnight, drain, and thoroughly rinse (enough for 2 C.)
- In a blender, mix all ingredients until smooth, about 5 minutes
- Transfer to a well buttered or oiled 8" loaf pan
- Pre-heat oven to 350 degrees F
- Bake covered with a lose sheet of tin foil for 45 minutes (last 15 minutes remove tin foil to brown top)
- Let cool on wire rack for 5 minutes
- Adjust recipe as necessary to achieve your perfect bread. Toaster ovens and conventional oven results vary. Don't give up on first attempt
- Let cool on wire rack and then slice and top with butter, organic peanut butter, or better yet, Vermont maple cream

This is my "go to" breakfast when I need something super healthy and quick. I make a loaf on Sunday, and eat throughout the week!
TIP: Test your baking powder to make sure it's still good. Heat 1/2 cup of water until hot, but not boiling. Add 1 tsp of baking powder. It would immediately buddle and foam. If it does not, then the baking powder has lost it's ability to create carbon dioxide (ie bubbles), which is what creates lift or rise in your bread.
