Lets talk Maple Pepper...

"This St. Patrick's Day I'll likely be headed down to my favorite Irish pub, Brady's Pub, here in Key West. And my favorite foodie special is their pierogis with sour cream and apple sauce. But I do like to bring my own garlic maple pepper to dash these delicious dumplings. Brady's pierogis are simply filled with potato, but yeah! Though not traditional Irish fare, potato seems about right, especially along side a 'black and tan' pint of pale ale and Guinness.

"I use to purchase my maple peppers online, until I discovered how easy it is to simply make my own at home. It's simple really!

"Here's a basic recipe...

1/4 C. pure maple sugar
1 tbsp black pepper, freshly ground
1/2 tsp sea salt (enhances flavor)
Optional Add-ins:
1/2 tsp smoked paprika (for smoky kick)
1/4 tsp garlic powder (for extra depth)
1/2 tsp red pepper flakes (for heat)

Instructions...

Mix ingredients in a small bowl
Blend in a spice grinder, for finer texture (optional)
Store in airtight container in a cool, dry place

Uses...

Sprinkle on grilled meats (steak, chicken, pork, fish)
Season roasted vegetables
Add to popcorn or nuts
Mix into your favorite rub blends or marinades
